Quick update: Lock Edits was rolled-out last quarter, which is the first phase of so-called "next gen freeze". More info on Locking a file can be found here on Help.
The ability to freeze a document is not yet available. In the meantime you can adjust permissions to “viewer” for all users. Make sure to do this after you roll forward so that your editor/owner permissions carry over to the next reporting period.

As mentioned here, as of yet the ability to freeze is not yet available in next gen. While we'll definitely be adding this feature into next gen, I don't have a solid timeline for when it will be released. I've added your request to our list of interested parties and we'll keep you updated as dates are decided and the feature becomes available.
