SEC XBRL Previewer
Is there still an option somewhere to view XBRL in the SEC XBRL Previewer? Or is this no longer an option?

Yep, in next gen you are still able to pull up an SEC Viewer version of each generation you run. To see that view, after you choose "Generate XBRL" from the toolbar, your document's generations are on the right-hand side. From that generation pane, there's an option for SEC Viewer, which is what you are familiar with in Classic.
I should add too that the iXBRL Viewer is also available here and that's a net new feature in next gen.
