How can I access each chunk file after it's been split using either of the two Split commands?
The command output only includes a list of file names and not the Absolute Paths.

Yes, you can access a specific chunk from the Split File Command output. An example of how to do so is to transform the Split File Chunks variable and use the Pick From List option to select the chunk you'd like.
