Removing source links
I have rolled-forward a file from an existing entity in order to build a new set of statements for a newly created entity. There are several sections from the rolled-forward statements that are not applicable to the new entity. I am unable to delete these sections without removing any sources links first. There does not appear to be a way to either 1) remove multiple source links at once; or 2) filter or sort source links so that they can be identified faster for removal.

Source links can be deleted in multiples, if you highlight a select group of cells you can right click and remove source links.
Additionally, when you are in a section of a spreadsheet you can navigate to the link properties tab and at the bottom there will be an option to generate a "Document links report" which I think will help with your second question!
Lastly, if you want all the source links gone, there is an option on the roll forward to not include links.
